Turkey Mole Soup
Sorry folks, no photos! I was terribly hungry and opted to eat rather than take a picture :D
Recipe adapted from Cooking Light's 2004 Holiday Cookbook Collection. (available to subscribers as a download from the site during the month of December. I've included the link here, but am not sure how long it will continue to work.)
Comments: I rarely cook directly from recipes, so almost everything I cook comes out as an adaptation. I have to say, this came out very tasty and was quite a hit at home. It'll definitely be marked as a recipe to repeat. As with most soups, it continues to develop flavor, so leftovers are even more tasty! The original recipe calls for toasted corn tortilla garnish, but I opted to forgo the corn tortillas and served it up with quesadillas and a side salad. Highly recommended.
